Mix together the dry ingredients: flour, salt, baking powder and set aside.
Mix together the wet ingredients: cointreau, almond, and vanilla extract and set aside.
In a stand mixer, cream together butter and sugar.
Add eggs one at a time until they are incorporated.
Add 1/3 of the dry ingredients into the butter mixture. Add 1/2 the wet ingredients. Add another 1/3 of the dry ingredients. Pour in the remaining wet ingredients. Pour in the remaining 1/3 of the dry ingredients. Always start and end with the dry ingredients.
Stir in almonds by hand.
Turn the dough out onto a baking sheet lined with parchment paper. Shape dough into a log the is 3" x 12".
Cook in a 350 degree oven for 30 minutes.
Allow to cool completely. Slice into 1" strips and bake at 300 degrees for 10 - 15 minutes. Flip and bake on the other side for 10 minutes or until golden brown.
