These delicious almond biscotti are one of my favorite recipes. I make them every year at Christmas and give out to friends and neighbors. It took me many tries to get the recipe just right. I hope that you enjoy it!
Almond Biscotti
These delicious almond biscotti are great with coffee or tea. I enjoy them as an afternoon treat or for breakfast. The recipe can easily be doubled.

Ingredients
- 1 cup White Sugar
- 1/2 cup Unsalted Butter at room temperature
- 2 Eggs
- 2 1/4 cup All Purpose Flour
- 2 tsp Baking Powder
- 1/4 tsp Salt
- 1/8 cup Cointreau or Orange Juice
- 3/4 tsp Almond Extract
- 1/2 tsp Vanilla Extract
- 1/2 cup Slice Almonds
Instructions
- Mix together the dry ingredients: flour, salt, baking powder and set aside.
- Mix together the wet ingredients: cointreau, almond, and vanilla extract and set aside.
- In a stand mixer, cream together butter and sugar.
- Add eggs one at a time until they are incorporated.
- Add 1/3 of the dry ingredients into the butter mixture. Add 1/2 the wet ingredients. Add another 1/3 of the dry ingredients. Pour in the remaining wet ingredients. Pour in the remaining 1/3 of the dry ingredients. Always start and end with the dry ingredients.
- Stir in almonds by hand.
- Turn the dough out onto a baking sheet lined with parchment paper. Shape dough into a log the is 3″ x 12″.
- Cook in a 350 degree oven for 30 minutes.
- Allow to cool completely. Slice into 1″ strips and bake at 300 degrees for 10 – 15 minutes. Flip and bake on the other side for 10 minutes or until golden brown.
